Milk chocolate: the perfect blend of cacao and milk
Milk chocolate is one of the most popular types of chocolate worldwide due to its sweet, slightly malty and sometimes somewhat caramelly taste. It goes perfectly with drinks such as coffee, tea or red wine as well as fruit, including strawberries. It also goes excellently with nuts and pastries. Compared to dark chocolate, which has a higher cacao content and less sugar, milk chocolate is mild and creamy. This is because it contains milk powder, which is added alongside the cacao mass, cacao butter and sugar. The milk fat emulsifies beautifully with the cacao butter and gives the chocolate its delicate, smooth glaze. The milk content plays a decisive role: there has to be at least 25% total dry cacao solids and 14% dry milk solids, including at least 3.5% milk fat. Only if this is the case can milk chocolate be called milk chocolate. The quantities of milk powder and sugar can vary, resulting in many different varieties.
