Milk chocolate: the perfect blend of cacao and milk

Milk chocolate is one of the most popular types of chocolate worldwide due to its sweet, slightly malty and sometimes somewhat caramelly taste. It goes perfectly with drinks such as coffee, tea or red wine as well as fruit, including strawberries. It also goes excellently with nuts and pastries. Compared to dark chocolate, which has a higher cacao content and less sugar, milk chocolate is mild and creamy. This is because it contains milk powder, which is added alongside the cacao mass, cacao butter and sugar. The milk fat emulsifies beautifully with the cacao butter and gives the chocolate its delicate, smooth glaze. The milk content plays a decisive role: there has to be at least 25% total dry cacao solids and 14% dry milk solids, including at least 3.5% milk fat. Only if this is the case can milk chocolate be called milk chocolate. The quantities of milk powder and sugar can vary, resulting in many different varieties. However, this type of chocolate is unsuitable for people who follow a vegan diet or are lactose intolerant.

Bean to Bar Chocolate: The Production Process

Our special chocolate varieties are diverse, but they all have one thing in common: they are made from sustainably grown cacao, certified organic Swiss whole milk powder and organically grown, regional sugar from the only Swiss sugar factory in Frauenfeld in the canton of Thurgau. The cleaned and peeled beans (nibs) are then roasted, ground, conched and tempered in our manufactory in Zurich. This process is called bean-to-bar and is the cornerstone of our chocolate production. To make milk chocolate, we slowly add the organic certified Swiss whole milk powder. The friction during grinding and conching creates heat, which allows the flavors to develop. This process creates the subtle caramel aroma and light honey note. It is important to us to minimize the use of whole milk powder and sugar in our chocolates. This makes for an elegant and cacao-intensive taste. As the cacao for each variety comes from a single growing region, we take into account the individual origins with their very own characteristics, which also becomes apparent when tasting the chocolate bars.

Responsible ways to enjoy milk chocolate

We place great importance on ethical sourcing and sustainability in the production of our high-quality chocolate. We source the fine cacao butter or the fine cacao beans for our milk chocolates directly from smallholder farmers. They receive fair prices and support for sustainable farming methods. It is often difficult for smallholder farmers to obtain an organic certificate, which is why not all of our chocolate bars are officially certified organic. However, we visit all the farms on site, maintain a close exchange and attach great importance to ensuring that they cultivate and operate sustainably. As a result, the laflor chocolate manufactory in Zurich is also certified organic. We also set high standards for other raw materials: we only use organic sugar, organic cacao butter and organic whole milk powder and completely avoid all sorts of additives and preservatives such as palm oil. In order to reduce laflor's ecological footprint during transportation, the first-class cacao for all sustainable chocolates is brought to Europe by container ship. Last but not least, we use recyclable packaging to minimize the environmental impact of this step as well. All these measures guarantee that every bar of chocolate is not only delicious, but also produced responsibly and fairly.
