Inspired by the “Äss-Bar”, which ensures that bread crumbs from the previous day find their way to our manufactory.
We coat lightly toasted organic bread crumbs with handmade dark milk chocolate.
We came up with this idea over lunch with our co-working space friends from “Äss-Bar”. We were remembering the sweet chocolate rolls we used to eat in the schoolyard. These were our culinary highlight of the school day. And just like that, the bread dragées were invented.
The “Äss-Bar” supplies us with crumbs made from ‘old’ organic bread, which we save from being thrown away thanks to the coating process. The bread is cut into evenly sized pieces in the “dumpling shredder” (there really is such a thing). We carefully toast them and coat them in our Dark Milk Chocolate, 56% Hacienda Limon, Ecuador. Snacking at its best.
