Laura, co-founder of laflor and Sarah, chocolatière
In laflor’s new factory in Zurich’s “Werkstadt”, the rich aroma of chocolate mingles with the hum of the machines. Here, the laflor team has created a place where passion and craftsmanship come together. Anyone who meets Laura at a chocolate workshop, a market tour or her popular ‘Schöner Saufen’ wine seminar will immediately recognize her passion for good food and being together with people. Her commitment to sustainably and fairly produced food is reflected in her work, as is her love for the people behind the products. Sarah, the master chocolatière, discovered her passion for chocolate in Solothurn, where she learnt the confectionery trade and gained further experience at Casa Nobile and Oro de Cacao. Her interest in the origins of cacao took her to Costa Rica, where she developed her love of the bean-to-bar process. Her expertise ensures that laflor maintains transparency and quality in every bar.
Content Chocolate-Workshop
Immerse yourself in the world of Sarah and Laura and make your own Rustico chocolate from scratch. The chocolate workshop begins with the roasting and subsequent grinding of cacao nibs in small stone melangeurs. The result is a somewhat rustic chocolate, similar to the traditional Taza chocolate from South America, in which the sugar is not completely melted. You then have the option of refining your chocolate with selected spices to add your own personal touch. The chocolate is then tempered, poured into molds and packaged. During production, you will also learn a lot about the history of cacao and chocolate and can enjoy a cup of hot chocolate from laflor. At the end of the workshop, you will take home the chocolate bars you have made yourself – to give as a gift or eat yourself!
