Rio Sinu – the sailboat chocolate with a floral note

Rio Sinu is a Colombian cooperative with more than 100 smallholder farmers working with the country’s indigenous varieties.

The beans are fermented and dried in the cooperative’s fermentation center. The cacao is shipped to Europe on the “Tres Hombres” sailing ship, where it is roasted, conched and processed into the finished chocolate bar.
