Canoabo is a village in western Venezuela. This area has long been known for its cacao cultivation. It is also one of the highest regions where cacao is able to grow. The cacao has a good reputation because it has an exceptionally elegant, slightly smoky flavor with a subtle acidity. Canoabo cacao is elongated, slightly bent at the end, and the beans are purple-white, which indicates a very high percentage of Criollo genes.

We get the cacao from the finca of Luis Morales and his son Rodrigo Alejandro Morales Duran, the “Hacienda San Cayetano”. From the original old trees, Luis and Rodrigo have nurtured seedlings, which they are now using to restock and expand the finca. They also produce their own chocolate named Chocolate Valle Canoabo. Harvests from this plantation are still relatively modest (1-1.5 tons), which is perfect for us as we can grow with the producer.

We especially like the hints of flavor of various spices.
