I’m sure you’ve noticed: On each laflor chocolate bar, we mark the year in which the cacao was harvested. Just like with wine. Because, as with the vines, the climate, weather and therefore also the soil conditions affect the aromas of the cacao and the chocolate.
The cacao from 2021 has taken us by surprise. We have now carefully roasted the cacao beans and processed them in a stone melangeur for 72 hours. We noticed a slight difference in taste compared to the last harvest. Although it has a cacao content of 70% like last year, Meret, our co-production manager, finds the chocolate slightly smokier and recognizes a subtle tobacco note.
Many of us in the team love the Brazil 70% for its freshness, light acidity and cheerful spirit. And it still has all that; now it has become even richer in character. Let’s not forget that a chocolate can have up to 600 flavor notes.
